Ingredients:
For the cauliflower:
- 1 large head cauliflower, cut into florets
- 2 eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Olive oil for drizzling
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper. Mix well to combine.
- Dip each cauliflower floret into the beaten eggs, shaking off any excess, then coat it with the breadcrumb mixture, pressing gently to adhere. Place the breaded cauliflower florets on the prepared baking sheet in a single layer.
- Drizzle the breaded cauliflower with olive oil for added crispiness.
- Bake the cauliflower in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through the baking time for even browning.
- Remove the cauliflower from the oven and reduce the oven temperature to 350°F (175°C).
- Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the baked cauliflower florets in the dish, slightly overlapping if necessary.
- Spoon the remaining marinara sauce over the cauliflower, covering it evenly. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese on top.
- Bake the cauliflower Parmesan in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove the cauliflower Parmesan from the oven and let it cool for a few minutes before serving.
- Garnish with fresh basil leaves, if desired, and serve the cauliflower Parmesan hot as a delicious and satisfying vegetarian main dish.
