Instructions:

- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup canned corn kernels, drained
- 1/2 cup buttermilk
- 1 large egg
- Vegetable oil for frying

- In a large mixing bowl, combine the cornmeal, flour, baking powder, baking soda, and salt. Mix well to combine.
- Stir in the shredded cheddar cheese, chopped green onions, and canned corn kernels until evenly distributed.
- In a separate bowl, whisk together the buttermilk and egg until smooth.
- Pour the buttermilk mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
- Heat vegetable oil in a deep skillet or Dutch oven over medium heat until it reaches 350°F (175°C).
- Using a small cookie scoop or spoon, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.
- Fry the hush puppies in batches for 2-3 minutes per side, or until golden brown and crispy.
- Once cooked, remove the hush puppies from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain any excess oil.
