Cheese & Herb Potato Fans
Ingredients:
- 8 medium potatoes
- 1/2 cup butter, melted
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2/3 cup shredded cheddar cheese
- 1/3 cup shredded Parmesan cheese
- 2 tablespoons each of minced fresh chives, sage, and thyme
- Preheat your oven to 425°F.
- Using a sharp knife, cut each potato crosswise into 1/8-inch slices, making sure not to cut all the way through so the slices remain attached at the bottom.
- Fan the sliced potatoes slightly and place them in a greased 13x9-inch baking dish.
- In a small bowl, mix the melted butter, salt, and pepper. Drizzle this mixture over the potatoes.
- Bake the potatoes, uncovered, for 50-55 minutes, or until they are tender.
- In a small bowl, combine the shredded cheddar cheese, shredded Parmesan cheese, and minced herbs.
- Sprinkle the cheese and herb mixture over the potatoes and bake for an additional 5 minutes, or until the cheese is melted.
