Hi there, sharing you again this very easy and delicious Cheese Ravioli With Toasted walnut sauce . Why am I sharing this? why not haha,

Ingredients:
- 1 cup part-skim ricotta
- 1⁄2 cup shredded smoked mozzarella (if you can't find smoked, regular mozzarella will do)
- 2 tablespoons grated Parmesan, plus more for garnish
- 48 wonton wrappers
- 2 egg whites, lightly beaten
- 2 tablespoons olive oil
- 2 pints cherry tomatoes (a combination of red and yellow works especially well)
- 2 cloves garlic, thinly sliced
- 1 cup fresh basil leaves, torn, plus more for garnish
- Salt and black pepper to taste
- In a bowl, mix together ricotta, smoked mozzarella, and grated Parmesan. This is where the magic happens – the cheesy filling for our ravioli.
- Lay out half of the wonton wrappers on a clean surface. Brush the edges lightly with beaten egg whites.
- Place a small spoonful of the cheese mixture onto each wrapper. Top with another wrapper and press down firmly around the edges to seal.
- In a large pot of boiling salted water, cook the ravioli in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
- In a skillet, heat olive oil over medium heat. Add garlic slices and cook until fragrant, about 1 minute. Throw in those cherry tomatoes and let them sizzle until they burst, about 5-7 minutes. Season with salt and black pepper.
- Toss the cooked ravioli and torn basil leaves into the skillet with the cherry tomatoes. Gently stir to coat everything in that flavorful sauce.
- Serve hot, garnished with more grated Parmesan and fresh basil leaves.
