Ingredients:
  • 1 cup part-skim ricotta
  • 1⁄2 cup shredded smoked mozzarella (if you can't find smoked, regular mozzarella will do)
  • 2 tablespoons grated Parmesan, plus more for garnish
  • 48 wonton wrappers
  • 2 egg whites, lightly beaten
  • 2 tablespoons olive oil
  • 2 pints cherry tomatoes (a combination of red and yellow works especially well)
  • 2 cloves garlic, thinly sliced
  • 1 cup fresh basil leaves, torn, plus more for garnish
  • Salt and black pepper to taste
Instructions:
  1. In a bowl, mix together ricotta, smoked mozzarella, and grated Parmesan. This is where the magic happens – the cheesy filling for our ravioli.
  2. Lay out half of the wonton wrappers on a clean surface. Brush the edges lightly with beaten egg whites.
  3. Place a small spoonful of the cheese mixture onto each wrapper. Top with another wrapper and press down firmly around the edges to seal.
  4. In a large pot of boiling salted water, cook the ravioli in batches until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  5. In a skillet, heat olive oil over medium heat. Add garlic slices and cook until fragrant, about 1 minute. Throw in those cherry tomatoes and let them sizzle until they burst, about 5-7 minutes. Season with salt and black pepper.
  6. Toss the cooked ravioli and torn basil leaves into the skillet with the cherry tomatoes. Gently stir to coat everything in that flavorful sauce.
  7. Serve hot, garnished with more grated Parmesan and fresh basil leaves.

So there you have it Remember, If the ravioli don't turn out perfectly, just call it "rustic" and nobody will know the difference :ROFLMAO:. Oh, and don't forget to twirl your fork like a pro when serving (JK) :) – it somehow makes everything taste better! Enjoy guys

Yum, cheese ravioli is always a favorite in my household! 😍 Though I might experiment with different cheeses like ricotta or goat cheese in the filling for some variety. Have you ever tried that? 🧀🤔
