Cheesy Baked Milkfish
Ingredients:
- 500 g boneless milkfish belly
- Juice from 1 lemon
- Salt
- Freshly ground black pepper
- Oil
- 1 cup grated quick melt cheese
- 1/2 cup grated mozzarella cheese
- 2 tbsp grated parmesan cheese
- 1 small tomato, peeled, seeded, and chopped
- 2 tbsp chopped red bell pepper
- 2 tbsp chopped green bell pepper
- 4 tbsp mayonnaise
- 2 cloves garlic, minced
- Season the milkfish belly with lemon juice, salt, and freshly ground black pepper.
- Heat a non-stick pan over medium-high heat, add a small amount of oil. Once hot, add the fish and fry skin side down. Once the skin side turns golden brown, flip the fish over and pan fry until slightly brown. Remove from the pan and set aside.
- In a bowl, combine the quick melt cheese, parmesan cheese, chopped tomato, chopped red bell pepper, chopped green bell pepper, and minced garlic. Set aside.
- Place the milkfish on a lightly greased baking tray. Spread mayonnaise on top of the milkfish, then sprinkle the cheese mixture on top.
- Bake in a preheated oven at 180°C for 15 minutes or until the cheese melts and turns slightly golden in color.
- Remove from the oven and serve hot.
