Ingredients:
  • 1 pound fresh scallops
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (such as cheddar, mozzarella, or Gruyère)
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 2 tablespoons unsalted butter, melted
Instructions:
  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.
  2. Pat the scallops dry with paper towels and place them in the prepared baking dish. Drizzle olive oil over the scallops and season with salt and pepper.
  3. In a small bowl, mix together the shredded cheese, Parmesan cheese, breadcrumbs, chopped parsley, and minced garlic.
  4. Sprinkle the cheese mixture evenly over the scallops.
  5. Drizzle the melted butter over the top of the scallops and cheese mixture.
  6. Bake in the preheated oven for 12-15 minutes, or until the scallops are cooked through and the cheese is melted and bubbly.
  7. Once done, remove from the oven and let it cool for a few minutes before serving.
  8. Garnish with additional chopped parsley if desired, and enjoy your cheesy baked scallops!
