- 1 pound fresh scallops
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup shredded cheese (such as cheddar, mozzarella, or Gruyère)
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons breadcrumbs
- 2 tablespoons chopped fresh parsley
- 1 clove garlic, minced
- 2 tablespoons unsalted butter, melted
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.
- Pat the scallops dry with paper towels and place them in the prepared baking dish. Drizzle olive oil over the scallops and season with salt and pepper.
- In a small bowl, mix together the shredded cheese, Parmesan cheese, breadcrumbs, chopped parsley, and minced garlic.
- Sprinkle the cheese mixture evenly over the scallops.
- Drizzle the melted butter over the top of the scallops and cheese mixture.
- Bake in the preheated oven for 12-15 minutes, or until the scallops are cooked through and the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes before serving.
- Garnish with additional chopped parsley if desired, and enjoy your cheesy baked scallops!
