Ingredients:
- 4 hotdog sausages, sliced into rounds
- 4 large potatoes, peeled and diced into small cubes
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Optional toppings: chopped green onions, hot sauce
- Heat the olive oil in a large skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, until they start to brown and become tender, about 10 minutes.
- Add the diced onion, bell pepper, and minced garlic to the skillet with the potatoes. Cook, stirring frequently, until the vegetables are softened, about 5 minutes.
- Push the potato and vegetable mixture to one side of the skillet, and add the sliced hotdog rounds to the empty side. Cook the hotdog slices until they are lightly browned on both sides, about 3-4 minutes.
- Once the hotdogs are cooked, mix them in with the potato and vegetable mixture in the skillet. Season everything with salt and pepper to taste.
- Sprinkle the shredded cheddar cheese evenly over the top of the hotdog and potato mixture. Cover the skillet with a lid and let it cook for another 2-3 minutes, or until the cheese is melted and bubbly.
- Remove the skillet from the heat and sprinkle the Cheesy Hotdog Breakfast Hash with chopped green onions, if desired.
- Serve hot, with your favorite hot sauce on the side for an extra kick. Enjoy your hearty and satisfying breakfast!
