Looking for a cozy and delicious meal to enjoy on a chilly evening? This Cheesy Toast-topped Beef Stew is the perfect comfort food that'll leave everyone asking for seconds!
Ingredients:
- For the Stew:
- 2 lbs beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 4 large carrots, sliced
- 3 potatoes, peeled and cubed
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- For the Cheesy Toast:
- 1 baguette, sliced into rounds
- 2 cups shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
Instructions:
- Prepare the Stew:
- In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Return the beef to the pot. Add the beef broth, red wine (if using), carrots, potatoes, celery, diced tomatoes, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the beef is tender and the vegetables are cooked through.
- Prepare the Cheesy Toast:
- Preheat your oven to 375°F (190°C).
- Place the baguette slices on a baking sheet. Brush each slice with melted butter and sprinkle with garlic powder and dried parsley.
- Top each slice with shredded cheddar and a sprinkle of Parmesan cheese.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Assemble and Serve:
- Ladle the hot stew into bowls.
- Top each bowl with a cheesy toast slice, letting it soak up some of the delicious broth.
