- 4 boneless, skinless chicken breasts
- 1 cup of long-grain white rice
- 2 cups of chicken broth
- 1 cup of diced carrots
- 1 cup of diced celery
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- 1 cup of frozen peas
- Fresh parsley for garnish (optional)
- Place the chicken breasts in the bottom of the crockpot.
- Add the rice, carrots, celery, onion, and garlic on top of the chicken.
- Pour in the chicken broth and sprinkle the thyme, rosemary, salt, and pepper.
- Cover and cook on low for 4-5 hours or until the chicken is cooked through and the rice is tender.
- About 30 minutes before serving, add the frozen peas and stir.
- Once done, shred the chicken with two forks and mix it well with the rice and vegetables.
- Garnish with fresh parsley if desired.
