  • 3-4 stalks green onions, cut in half

  • Set aside half of the garlic, ginger, and green onion for later use during the week. Securely tie the bundles of green onion with twine.
  • In a slow cooker, place the remaining green onion, garlic, and ginger. Fill the slow cooker with water, ensuring it reaches up to 1 inch below the rim. Initially, set the cooker to high heat. After about an hour, the bone broth will reach a simmer, causing scum to form on the surface; remove and discard this scum. Adjust the setting to low heat and allow the bone broth to simmer for at least 6 hours.
  • Periodically, skim any particles or oil from the surface of the broth using a skimmer. Season the broth with salt to taste.
  • As you consume the bone broth, replenish the slow cooker with fresh water as needed. After 2 days of cooking, discard any remaining meat, bones, herbs, and vegetables. Extended cooking beyond 2 days may impart a sour taste to the broth due to bone breakdown. Add the reserved garlic, onion, and green onion (plus additional meat or bone if desired).
