I whipped up a delightful chicken lo mein last night, and it was a big hit at the dinner table! The savory soy sauce-marinated chicken combined with tender noodles and crisp veggies made for a satisfying and flavorful meal that's perfect for busy weeknights.
Chicken Lo Mein Recipe
Ingredients:
- 8 oz lo mein noodles or spaghetti
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 cup sliced vegetables (bell peppers, broccoli, carrots, etc.)
- 2 green onions, sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
1. Cook the lo mein noodles according to package instructions. Drain and set aside.
2. In a bowl, combine the sliced chicken with soy sauce, oyster sauce, hoisin sauce, and sesame oil. Let it marinate for 10-15 minutes.
3. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 4-5 minutes. Remove from the pan and set aside.
4. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
5. Add the sliced vegetables to the pan and stir-fry for 3-4 minutes until they are tender-crisp.
6. Return the cooked chicken to the pan. Add the cooked noodles and green onions. Toss everything together until well combined and heated through.
7. Season with salt and pepper to taste.
