Hey everyone! I wanted to share one of my go-to recipes for a comforting meal that's both easy and delicious: Chicken Rice. This dish is perfect for busy weeknights and is sure to please the whole family. Here's how I make it:

- 1 lb (450g) chicken thighs or breasts, cut into bite-sized pieces
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper (red or green), diced
- 1 cup frozen peas (or fresh if you prefer)
- 2 tablespoons vegetable oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Heat the Oil: In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Cook the Chicken: Add the chicken pieces to the skillet. Season with salt, pepper, thyme, and paprika. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add Garlic and Bell Pepper: Stir in the minced garlic and diced bell pepper. Cook for another 2 minutes until fragrant.
- Add Rice and Broth: Stir in the rice, making sure it’s well-coated with the oil and spices. Pour in the chicken broth and bring to a boil.
- Simmer: Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Add Peas: Stir in the frozen peas and cook for an additional 2-3 minutes until the peas are heated through.
- Serve: Fluff the rice with a fork and garnish with fresh parsley if desired. Serve hot and enjoy!
