  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup sliced mushrooms (optional)
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup vodka (optional)
  • 1 teaspoon crushed red pepper flakes (optional, for heat)
  • 1 pound rigatoni pasta
  • Fresh basil or parsley, chopped, for garnish
Instructions:
  1. Season the chicken pieces with salt and freshly ground black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes.
  4. Add the minced garlic and sliced bell peppers (and mushrooms, if using) to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
  5. Pour in the crushed tomatoes and vodka (if using). Stir to combine, scraping up any browned bits from the bottom of the skillet.
  6. Reduce the heat to low and simmer the sauce for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy and well combined. Taste and adjust the seasoning with salt, pepper, and crushed red pepper flakes, if desired.
  8. While the sauce is simmering, bring a large pot of salted water to a boil. Cook the rigatoni pasta according to the package instructions until al dente. Drain the pasta, reserving a cup of pasta water.
  9. Add the cooked chicken to the skillet with the sauce, tossing to coat the chicken in the creamy tomato sauce.
  10. If the sauce is too thick, you can thin it out with some of the reserved pasta water.
  11. Add the cooked rigatoni to the skillet with the chicken and sauce. Toss everything together until the pasta is evenly coated in the sauce.
  12. Garnish with chopped fresh basil or parsley before serving.
