Ingredients

For the Chicken Marinade:

  • 1.5 lbs (700g) boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 cup plain yogurt (Greek works too)
  • 1 tbsp lemon juice
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
For the Masala Sauce:

  • 2 tbsp oil or ghee
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp chili powder (adjust to your heat preference)
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • 1/2 cup water (adjust for desired thickness)
  • 1 tbsp sugar (optional, to balance the acidity)
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Chicken:
    Mix all the marinade ingredients in a bowl, add the chicken, and let it sit for at least 2 hours (overnight is even better!).
  2. Cook the Chicken:
    You can grill, broil, or pan-sear the chicken pieces until lightly charred. Set aside.
  3. Make the Masala Sauce:
    • Heat oil or ghee in a large pan. Add the onions and sautĆ© until golden brown.
    • Add garlic and ginger, cook for another minute.
    • Stir in the spices (cumin, paprika, turmeric, garam masala, chili powder) and toast for about 30 seconds.
    • Add the crushed tomatoes and let it simmer for 10 minutes, stirring occasionally.
  4. Combine & Simmer:
    Stir in the cream (or coconut milk) and water, then add the cooked chicken. Let it simmer for another 10 minutes so the flavors meld together.
  5. Garnish & Serve:
    Sprinkle with fresh cilantro and serve hot with naan or basmati rice.
