Ingredients:

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 3 tablespoons mayonnaise or vegan mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons capers
  • 1 1/2 teaspoons stone-ground mustard
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons roasted unsalted pepitas
  • 1 cup baby kale
  • 4 slices whole wheat bread, toasted
Instructions:
  1. Mash the chickpeas in a bowl with a fork.
  2. Add mayonnaise, lemon juice, dill, capers, mustard, turmeric, salt, and pepper. Mix well.
  3. Spread the chickpea salad onto 2 slices of bread.
  4. Top with pepitas and baby kale.
  5. Cover with the remaining 2 slices of bread to make sandwiches.
