I recently made Chilean Charquicán, and it turned out to be a heartwarming and flavorful stew! This traditional Chilean dish is a delicious combination of beef, vegetables, and spices, creating a comforting meal that's perfect for any occasion. Here's how you can make this hearty dish at home:
Ingredients:
- 1 lb (450g) beef stew meat, cut into bite-sized pieces
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 large potatoes, peeled and diced
- 1 large carrot, peeled and diced
- 1 cup butternut squash, peeled and diced
- 1 cup green beans, cut into 1-inch pieces
- 1 cup corn kernels (fresh or frozen)
- 1 cup peas (fresh or frozen)
- 2 cups beef or vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- Fresh parsley or cilantro, chopped (for garnish)
Instructions:
1. Cook the Beef:
- In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides.
- Remove the beef from the pot and set aside.
2. Sauté the Aromatics:
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
3. Add Vegetables and Spices:
- Return the beef to the pot and add the diced potatoes, carrot, butternut squash, green beans, corn, and peas.
- Stir in the ground cumin, paprika, dried oregano, salt, and black pepper. Mix well to combine the flavors.
4. Simmer the Stew:
- Pour in the beef or vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for about 30-40 minutes, or until the vegetables are tender and the beef is cooked through.
5. Adjust Seasoning:
- Taste the stew and adjust the seasoning with more salt and pepper if needed.
6. Serve:
- Ladle the Charquicán into bowls and garnish with chopped fresh parsley or cilantro.
