I recently made Chilean Charquicán, and it turned out to be a heartwarming and flavorful stew! This traditional Chilean dish is a delicious combination of beef, vegetables, and spices, creating a comforting meal that's perfect for any occasion. Here's how you can make this hearty dish at home:

Ingredients:​

  • 1 lb (450g) beef stew meat, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 large potatoes, peeled and diced
  • 1 large carrot, peeled and diced
  • 1 cup butternut squash, peeled and diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup peas (fresh or frozen)
  • 2 cups beef or vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions:​

1. Cook the Beef:​

  • In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides.
  • Remove the beef from the pot and set aside.

  • In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
