Ingredients:
- ½ cup olive oil
- 2 tablespoons red wine vinegar
- ½ cup finely chopped fresh flat-leaf parsley
- 3-4 cloves garlic, minced
- 2 small red chilies, deseeded and finely chopped (or 1 to taste)
- ¾ teaspoon dried oregano
- 1 teaspoon coarse salt
- Freshly ground black pepper, to taste
- In a small bowl, whisk together the olive oil, vinegar, garlic, salt, oregano, and pepper.
- Stir in the chopped parsley and chili peppers.
