Classic Chimichurri Recipe

Ingredients:

  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • ½ cup finely chopped fresh flat-leaf parsley
  • 3-4 cloves garlic, minced
  • 2 small red chilies, deseeded and finely chopped (or 1 to taste)
  • ¾ teaspoon dried oregano
  • 1 teaspoon coarse salt
  • Freshly ground black pepper, to taste
Instructions:

  1. In a small bowl, whisk together the olive oil, vinegar, garlic, salt, oregano, and pepper.
  2. Stir in the chopped parsley and chili peppers.
  3. Let the flavors meld for at least 15 minutes before serving.
