Chimichurri Steak
Chimichurri Steak
Ingredients:
- 2 ribeye steaks (about 1 inch thick)
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp red wine vinegar
- 1 tsp red pepper flakes (optional for heat)
- Salt and pepper, to taste
- 1/2 tsp smoked paprika
Instructions:
- Prepare the Chimichurri Sauce: In a small bowl, mix together the olive oil, minced garlic, parsley, cilantro, red wine vinegar, red pepper flakes (if using), smoked paprika, and a pinch of salt and pepper. Stir well and let the flavors meld while you prepare the steak.
- Season the Steaks: Generously season both sides of the steaks with salt, pepper, and a sprinkle of smoked paprika for an extra layer of flavor.
- Grill the Steaks: Heat your grill (or grill pan) to medium-high heat. Grill the steaks for 4-5 minutes on each side for medium-rare, or until cooked to your preferred doneness. Let the steaks rest for a few minutes after grilling.
- Top with Chimichurri: Slice the steaks against the grain, then spoon the fresh chimichurri sauce generously over the top.
- Serve: Pair with a side of grilled veggies, potatoes, or a fresh salad, and dig in!
