Hey everyone! I’ve been experimenting with a Chipotle-style chicken recipe at home, and I think I’ve finally nailed it! It’s juicy, smoky, and has that perfect hint of spice. I figured I’d share in case anyone else wants to try making it. Let me know if you tweak it—I'm always up for suggestions!
Ingredients:
- 2 lbs boneless, skinless chicken thighs (trust me, thighs are the way to go)
- 3 tbsp adobo sauce (from a can of chipotles in adobo)
- 2 chipotle peppers (minced)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tbsp smoked paprika
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- ½ tsp black pepper
- Juice of 1 lime
Instructions:
- Marinate: Blend or mix all the ingredients (except chicken) into a smooth marinade. Coat the chicken evenly and let it sit for at least 1 hour (overnight is even better!).
- Grill or Pan-Sear: Heat a grill or cast-iron skillet over medium-high heat. Cook the chicken for about 5-7 minutes per side, or until it’s nicely charred and cooked through.
- Rest & Chop: Let it rest for a few minutes, then chop it up into bite-sized pieces—just like they do at Chipotle.
- Serve: In a burrito, over rice, in a salad—whatever works for you!
