Chipotle Copycat Chicken Recipe

Hey everyone! I’ve been experimenting with a Chipotle-style chicken recipe at home, and I think I’ve finally nailed it! It’s juicy, smoky, and has that perfect hint of spice. I figured I’d share in case anyone else wants to try making it. Let me know if you tweak it—I'm always up for suggestions!

Ingredients:

  • 2 lbs boneless, skinless chicken thighs (trust me, thighs are the way to go)
  • 3 tbsp adobo sauce (from a can of chipotles in adobo)
  • 2 chipotle peppers (minced)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of 1 lime

Instructions:

  1. Marinate: Blend or mix all the ingredients (except chicken) into a smooth marinade. Coat the chicken evenly and let it sit for at least 1 hour (overnight is even better!).
  2. Grill or Pan-Sear: Heat a grill or cast-iron skillet over medium-high heat. Cook the chicken for about 5-7 minutes per side, or until it’s nicely charred and cooked through.
  3. Rest & Chop: Let it rest for a few minutes, then chop it up into bite-sized pieces—just like they do at Chipotle.
  4. Serve: In a burrito, over rice, in a salad—whatever works for you!

This tastes so much like Chipotle’s, but honestly, I think it’s even better because you can control the spice and freshness. Anyone else tried a version of this before? Would love to hear your tips!
