Ingredients:
- 1/2 cup of vegetable oil
- 4 oz of unsweetened baking chocolate, melted and cooled
- 2 cups of granulated sugar
- 2 teaspoons of vanilla extract
- 4 eggs
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 3/4 cup of powdered sugar
- In a large bowl, mix together the vegetable oil, melted chocolate, granulated sugar, and vanilla extract.
- Stir in the eggs, one at a time, until well combined.
- Add the flour, baking powder, and salt, and mix until a smooth dough forms. Cover the dough and refrigerate for at least 3 hours.
- Preheat the oven to 350°F (175°C). Grease a cookie sheet with shortening or cooking spray.
- Drop teaspoonfuls of dough into the powdered sugar and roll them around to coat, shaping them into balls. Place the dough balls about 2 inches apart on the prepared cookie sheets.
- Bake for 9 to 11 minutes, or until the edges are set. Remove from the oven and immediately transfer the cookies from the cookie sheets to cooling racks to cool completely.
