Ingredients:
- 1 large egg, separated
- ½ cup butter, softened
- ¼ cup packed brown sugar
- 1 cup all-purpose flour
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- ¼ cup finely chopped walnuts
- ⅔ cup orange fruit jam
- ¼ cup cocoa powder
- 1/3 cup mini chocolate chips (optional, for extra chocolatey goodness)
Directions:
- Preheat your oven to 300°F (150°C). Grease two cookie sheets and set them aside.
- In a small bowl, whisk the egg white. Place the chopped walnuts in another small bowl.
- In a mixing bowl, cream together the butter, brown sugar, and egg yolk until light and fluffy, about 2 minutes.
- Add the flour, vanilla extract, salt, and cocoa powder; mix until well combined.
- Scoop dough into 1½-inch balls. Dip each ball in the egg white, then roll in the chopped walnuts until coated. Place the balls 2 inches apart on the prepared cookie sheets.
- Bake in the preheated oven for about 5 minutes, or until slightly puffed.
- Remove from the oven. Use your thumb to gently press an indent into the center of each cookie. Spoon orange jam into each thumbprint, filling it to the brim.
- Return the cookies to the oven and bake for an additional 8 minutes, or until set.
- If using, sprinkle mini chocolate chips on top of the jam before the cookies cool for extra chocolate flavor.
- Remove from the oven and transfer to wire racks to cool completely.
