Chorizo Sweet Potato Skillet

Weeknight dinner win coming your way! 🔜 This 🥔 "Chorizo Sweet Potato Skillet" 🥔 is crazy good and SO easy. Think spicy chorizo, sweet potatoes, and melty cheese all in one pan - comfort food magic with minimal effort! :cool:

Ingredients:
  • 1 lb Mexican chorizo sausage, casings removed
  • 2 medium sweet potatoes, peeled and diced
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded Mexican blend cheese
  • Chopped cilantro for garnish
  • Lime wedges for serving
Instructions:
  1. In a large oven-safe skillet, cook the chorizo over medium-high heat, crumbling it with a wooden spoon as it browns.
  2. Once chorizo is cooked through, remove it from the skillet with a slotted spoon, leaving the rendered fat behind.
  3. Add the diced sweet potatoes to the skillet and season them with the chili powder, cumin, salt and pepper. Cook for 10 minutes undisturbed to get a nice sear.
  4. Toss in the diced bell pepper and onion and continue sautéeing for 5 more minutes until potatoes are crispy and veggies have softened.
  5. Stir the cooked chorizo back into the skillet along with the minced garlic.
  6. Top everything evenly with the shredded cheese.
  7. Transfer the skillet to the oven and broil for 2-3 minutes until cheese is melty and bubbly!
  8. Garnish with chopped cilantro and serve with lime wedges.
