- 2 tablespoons sugar
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 1 cup all-purpose flour
- Vegetable oil, for frying
- Cinnamon sugar (1/2 cup sugar mixed with 1 tablespoon cinnamon), for coating
- Ice cream of your choice
- Toppings: chocolate sauce, caramel sauce, sprinkles, chopped nuts, etc.
- In a saucepan, combine water, sugar, salt, and vegetable oil. Bring to a boil over medium heat.
- Remove from heat and add the flour all at once. Stir quickly until the mixture forms a ball of dough.
- Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Transfer the dough to a piping bag fitted with a large star tip. Pipe 4-6 inch strips of dough directly into the hot oil, using scissors to cut the dough.
- Fry the churros until golden brown and crispy, about 2-3 minutes per side. Remove from oil and drain on paper towels.
- While still warm, roll the churros in cinnamon sugar until coated.
- Allow the churros to cool slightly. Once cooled, sandwich a scoop of ice cream between two churros.
- Roll the edges of the ice cream sandwich in toppings of your choice.
