Hey everyone, I want to introduce you to one of my favorite condiments: Cilantro Mint Chutney! 
This zesty, green sauce is packed with fresh cilantro and mint, giving it a refreshing and vibrant flavor. It's super easy to make and pairs perfectly with so many dishes.

- 1 cup fresh cilantro (coriander) leaves, packed
- 1/2 cup fresh mint leaves, packed
- 1-2 green chilies, chopped (adjust according to spice preference)
- 1 small onion, chopped
- 1-2 cloves garlic
- 1-inch piece of ginger, peeled and chopped
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- Salt to taste
- 2-3 tablespoons water (adjust as needed)
Optional Add-ins:
- 1/2 teaspoon cumin seeds
- 1/2 cup plain yogurt (for a creamier chutney)
Instructions:
- Prepare the Ingredients:
- Wash and roughly chop the cilantro and mint leaves.
- Chop the onion, garlic, and ginger.
- Blend the Chutney:
- In a blender or food processor, combine the cilantro, mint, green chilies, onion, garlic, ginger, lemon juice, sugar, and salt.
- Add a small amount of water to help with blending.
- Adjust Consistency:
- Blend until smooth. If the chutney is too thick, add more water, a little at a time, until you reach the desired consistency.
- Taste and Adjust:
- Taste the chutney and adjust the seasoning as needed, adding more salt, sugar, or lemon juice to balance the flavors.
- Optional Creamy Variation:
- For a creamier version, blend in the yogurt after the chutney is smooth. This will give a milder flavor and creamier texture.
- Serve:
- Transfer the chutney to a serving bowl. It can be served immediately or chilled in the refrigerator for later use.
Serving Suggestions:
- Serve as a dipping sauce with samosas, pakoras, or other appetizers.
- Use as a spread for sandwiches or wraps.
- Drizzle over grilled meats or vegetables.
- Mix with yogurt to create a raita.
