Cinnamon Coffee Cake Recipe
Ingredients:
- 2 cups all-purpose flour
- ¾ cup plus 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup vegetable shortening
- 1 teaspoon ground cinnamon
- 1 large egg, beaten
- ¾ cup milk
- 2 tablespoons unsalted butter, melted
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
- In a medium bowl, combine flour, ¾ cup sugar, baking powder, and salt.
- Using a pastry cutter or two knives, cut in the shortening until the mixture resembles coarse crumbs. Reserve ½ cup of this mixture in a small bowl. Stir in the remaining 2 tablespoons of sugar and cinnamon into the reserved mixture and set aside.
- Stir the beaten egg and milk into the remaining flour mixture until well combined.
- Spoon the batter into the prepared pan, smoothing the surface. Pour the melted butter evenly over the top.
- Sprinkle the reserved crumb mixture evenly over the melted butter.
- Bake the cake until a toothpick inserted in the center comes out clean, about 35 minutes.
