- 4 salmon fillets (about 6 ounces each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons honey
- Zest and juice of 1 lemon
- Zest and juice of 1 orange
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 pound baby potatoes, halved
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 tablespoon chopped fresh parsley, for garnish
- Preheat your oven to 400°F (200°C).
- Season the salmon fillets with salt and pepper, then set them aside while you prepare the glaze.
- In a small bowl, whisk together the olive oil, honey, lemon zest, lemon juice, orange zest, orange juice, minced garlic, and Dijon mustard to make the citrus glaze.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the citrus glaze generously over the salmon.
- In a separate bowl, toss the baby potatoes, broccoli florets, and sliced bell peppers with a drizzle of olive oil, salt, and pepper until evenly coated.
