- 4 slices bacon, diced
- 1 onion, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 3 cups diced potatoes
- 2 cups clam juice
- 2 cups water
- 2 cans (6.5 oz each) chopped clams, drained
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
- In a large pot, cook diced bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside, leaving bacon fat in the pot.
- Add chopped onion and celery to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
- Stir in diced potatoes, clam juice, and water. Bring to a simmer and cook until potatoes are tender, about 10-15 minutes.
- Stir in chopped clams and heavy cream. Simmer for another 5 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with chopped fresh parsley and reserved crispy bacon.
