Hey foodie friends! Just got back from a trip out of town and I'm telling you, the clam chowder I had at the hotel during my staycation was amazing. Couldn't resist trying to recreate it at home, so here's my attempt!

- 4 slices bacon, diced
- 1 onion, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 3 cups potatoes, diced
- 2 cups chicken broth
- 2 cups milk
- 2 cans (6.5 oz each) chopped clams, drained
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley, for garnish
- In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the diced onion, celery, and minced garlic to the pot. Cook until softened, about 5 minutes.
- Stir in the diced potatoes and cook for another 5 minutes.
- Pour in the chicken broth and bring to a simmer. Cook until the potatoes are tender, about 10 minutes.
- Stir in the milk, chopped clams, dried thyme, and cooked bacon. Season with salt and pepper to taste.
- Let the chowder simmer for another 5-10 minutes to allow the flavors to meld together.
- Serve hot, garnished with chopped fresh parsley.
