Clam Chowder

Hey foodie friends! Just got back from a trip out of town and I'm telling you, the clam chowder I had at the hotel during my staycation was amazing. Couldn't resist trying to recreate it at home, so here's my attempt!

Ingredients:

  • 4 slices bacon, diced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced
  • 2 cups chicken broth
  • 2 cups milk
  • 2 cans (6.5 oz each) chopped clams, drained
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish
Instructions:

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion, celery, and minced garlic to the pot. Cook until softened, about 5 minutes.
  3. Stir in the diced potatoes and cook for another 5 minutes.
  4. Pour in the chicken broth and bring to a simmer. Cook until the potatoes are tender, about 10 minutes.
  5. Stir in the milk, chopped clams, dried thyme, and cooked bacon. Season with salt and pepper to taste.
  6. Let the chowder simmer for another 5-10 minutes to allow the flavors to meld together.
  7. Serve hot, garnished with chopped fresh parsley.
