Ingredients:
- 4 cups vegetable or chicken broth
- 1 cup sliced mushrooms
- 1 cup diced carrots
- 1 cup chopped spinach
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- Salt and pepper to taste
- Optional: green onions for garnish
- In a large pot, bring the broth to a simmer over medium heat.
- Add the sliced mushrooms, diced carrots, minced garlic, and ginger. Let it cook for about 10 minutes until the vegetables are tender.
- Stir in the chopped spinach and cook for another 2-3 minutes until it wilts.
