  • 2 pounds collard greens
  • 1 tablespoon olive oil

  • 4 cloves garlic, minced
  • 1 smoked ham hock (or 6 slices of bacon)
  • 4 cups chicken broth
  • 2 cups water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
Instructions:

  1. Prepare Collard Greens: Rinse the collard greens thoroughly to remove any grit. Remove the thick stems and cut the leaves into strips.
  2. Cook Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add Ham Hock: If using a ham hock, add it to the pot with the onions and garlic. If using bacon, chop it into pieces and cook until crisp, then remove and set aside, leaving the rendered fat in the pot.
  4. Add Liquid: Pour in the chicken broth and water, stirring to combine. Bring the mixture to a boil.
  5. Add Collard Greens: Add the collard greens to the pot, a handful at a time, stirring to wilt them down before adding more. Once all the greens are in the pot, reduce the heat to low.
  6. Season and Simmer: Stir in the apple cider vinegar, sugar, red pepper flakes (if using), salt, and pepper. Cover and let the collard greens simmer on low heat for 1-2 hours, stirring occasionally, until the greens are tender and flavorful. If using a ham hock, remove it from the pot, shred the meat, and return the meat to the pot, discarding the bone.
  7. Adjust Seasoning: Taste and adjust the seasoning with more salt, pepper, or vinegar as needed.
  8. Serve: Serve the collard greens hot as a side dish, garnished with the reserved bacon pieces if using.
