Hey, what's up, my fellow broke college friends!!
I know the struggle of trying to eat something other than instant ramen and vending machine snacks for every meal. That's why I've got the perfect brunch dish to satisfy your cravings without breaking the bank
Ingredients:
Instructions:

- 6 large eggs
- 1 cup milk (or non-dairy milk alternative)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 cups cubed bread (stale bread works great, or use a cheap loaf)
- 1 cup shredded cheese (cheddar, mozzarella, or a combo)
- 1 cup chopped veggies (bell peppers, mushrooms, spinach, onions – use what you've got!)
- 2 tablespoons butter or oil (for greasing the baking dish)

- Preheat your oven to 375°F (190°C) and grease a baking dish with butter or oil.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
- Add the cubed bread, shredded cheese, and chopped veggies to the egg mixture, and give everything a good stir until the bread is coated and the ingredients are evenly distributed.
- Pour the mixture into the greased baking dish and spread it out evenly.
- Bake for 30-35 minutes, or until the eggs are set and the top is golden and slightly crispy.
- Let it cool for a few minutes, then dig in and enjoy your broke college kid's brunch paradise!
