I recently made Colombian Sancocho, and it was a truly delightful experience! This hearty and flavorful soup is a staple in Colombian cuisine, known for its comforting mix of meats, vegetables, and aromatic herbs. Each spoonful warms you up, making it perfect for gatherings or cozy family dinners. Here’s how to prepare this delicious dish at home:
Ingredients:
- For the Sancocho:
- 1 lb (450g) chicken (bone-in pieces preferred)
- 1 lb (450g) beef (such as chuck or short ribs, cut into chunks)
- 1 lb (450g) pork (like ribs or shoulder, cut into pieces)
- 2-3 medium potatoes, peeled and cut into chunks
- 2-3 ears of corn, cut into thirds
- 1 large green plantain, peeled and cut into slices
- 1 medium onion, chopped
- 2-3 cloves garlic, minced
- 1 large tomato, chopped
- 1 bell pepper, chopped
- 1 bunch of fresh cilantro, chopped
- 1-2 teaspoons ground cumin
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- 8-10 cups of water (or chicken broth)
Instructions:
1. Sauté the Aromatics:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until they are soft and fragrant, about 5 minutes.
2. Brown the Meats:
- Add the chicken, beef, and pork to the pot. Sear them for about 5-7 minutes until browned on all sides.
3. Add Vegetables and Seasonings:
- Stir in the chopped tomato, cumin, salt, and pepper. Cook for another few minutes, allowing the tomatoes to break down.
4. Pour in the Liquid:
- Add the water (or broth) to the pot, ensuring the meats are covered. Bring to a boil, then reduce the heat and let it simmer for about 30-40 minutes, skimming off any foam that rises to the surface.
5. Add Root Vegetables:
- After the initial cooking time, add the potatoes, corn, and green plantain to the pot. Continue to simmer for another 20-30 minutes, or until the vegetables are tender and the flavors have melded together.
6. Finish and Serve:
- Once everything is cooked, stir in the chopped cilantro. Taste and adjust the seasoning if necessary. Serve the Sancocho hot, accompanied by avocado slices, lime wedges, and white rice for a complete meal.
