Colombian-Style Arepas (Grilled Corn Cakes) Recipe:
Ingredients:
- 2 cups pre-cooked cornmeal (masarepa)
- 2 1/2 cups warm water
- 1 teaspoon salt
- 1 tablespoon vegetable oil, plus more for greasing the griddle
- Optional toppings: cheese, avocado, butter, ham, eggs, etc.
- In a large mixing bowl, combine the pre-cooked cornmeal, warm water, salt, and vegetable oil. Mix until the dough comes together and forms a smooth, slightly sticky consistency.
- Divide the dough into 8 equal portions and roll each portion into a ball. Flatten each ball to form a disk, about 1/4 inch thick.
- Heat a lightly greased griddle or skillet over medium heat. Place the arepas on the griddle and cook for 4-5 minutes on each side, or until golden brown and cooked through.
- Once cooked, transfer the arepas to a plate and let them cool slightly before serving.
- Slice each arepa in half and fill or top with your favorite ingredients, such as cheese, avocado, butter, ham, eggs, etc.
- Serve the Colombian-Style Arepas warm and enjoy!
