Ingredients:

  • 2 cups broken rice (Tấm rice)
  • 1 pound pork chops or pork shoulder, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1 cucumber, thinly sliced
  • 1 tomato, thinly sliced
  • Pickled carrots and daikon (Đồ Chua)
  • Fresh cilantro
  • Fried egg (optional)
For the dipping sauce (Nước Chấm):

  • 1/4 cup fish sauce
  • 1/4 cup water
  • 2 tablespoons sugar
  • 2 tablespoons lime juice
  • 1 garlic clove, minced
  • 1 bird’s eye chili, finely chopped
Instructions:

  1. Marinate the Pork: In a bowl, combine the minced garlic, fish sauce, soy sauce, sugar, honey, and vegetable oil. Add the pork slices and mix well to coat. Let the pork marinate for at least 1 hour, or overnight for best results.
  2. Cook the Broken Rice: Rinse the broken rice under cold water until the water runs clear. Cook the rice according to the package instructions, or using a rice cooker, until tender.
  3. Grill the Pork: Preheat a grill or grill pan over medium-high heat. Grill the marinated pork slices for about 3-4 minutes on each side, or until fully cooked and nicely charred. Alternatively, you can cook the pork in a hot skillet.
  4. Prepare the Dipping Sauce: In a small bowl, mix together the fish sauce, water, sugar, lime juice, minced garlic, and chopped chili until the sugar is dissolved. Adjust the flavors to taste.
  5. Assemble the Plate: Place a generous serving of broken rice on each plate. Top with grilled pork slices. Arrange cucumber and tomato slices, pickled carrots and daikon, and fresh cilantro around the rice. Add a fried egg on top, if desired.
  6. Serve: Drizzle some dipping sauce over the pork and rice, and serve the remaining sauce on the side for dipping.
