- 2 cups broken rice (Tấm rice)
- 1 pound pork chops or pork shoulder, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- 1 cucumber, thinly sliced
- 1 tomato, thinly sliced
- Pickled carrots and daikon (Đồ Chua)
- Fresh cilantro
- Fried egg (optional)
- 1/4 cup fish sauce
- 1/4 cup water
- 2 tablespoons sugar
- 2 tablespoons lime juice
- 1 garlic clove, minced
- 1 bird’s eye chili, finely chopped
- Marinate the Pork: In a bowl, combine the minced garlic, fish sauce, soy sauce, sugar, honey, and vegetable oil. Add the pork slices and mix well to coat. Let the pork marinate for at least 1 hour, or overnight for best results.
- Cook the Broken Rice: Rinse the broken rice under cold water until the water runs clear. Cook the rice according to the package instructions, or using a rice cooker, until tender.
- Grill the Pork: Preheat a grill or grill pan over medium-high heat. Grill the marinated pork slices for about 3-4 minutes on each side, or until fully cooked and nicely charred. Alternatively, you can cook the pork in a hot skillet.
- Prepare the Dipping Sauce: In a small bowl, mix together the fish sauce, water, sugar, lime juice, minced garlic, and chopped chili until the sugar is dissolved. Adjust the flavors to taste.
- Assemble the Plate: Place a generous serving of broken rice on each plate. Top with grilled pork slices. Arrange cucumber and tomato slices, pickled carrots and daikon, and fresh cilantro around the rice. Add a fried egg on top, if desired.
- Serve: Drizzle some dipping sauce over the pork and rice, and serve the remaining sauce on the side for dipping.
