Instructions:
  1. In a large pot, bring the chicken broth to a gentle simmer over medium heat.
  2. Add the lemongrass and galangal (or ginger) slices to the broth and let them simmer for about 5 minutes to infuse their flavors.
  3. Stir in the thinly sliced chicken breasts and let them cook for 5-7 minutes until they are cooked through.
