I have a new favorite dessert called cookie dough ice cream sandwiches. These indulgent treats feature edible cookie dough and creamy ice cream sandwiched together for a delightful dessert that’s perfect for any occasion! If you want to try making some, below's the recipe:
Ingredients:
For the Edible Cookie Dough:
- 1/2 cup (115 g) unsalted butter, softened
- 1/2 cup (100 g) brown sugar
- 1/4 cup (50 g) granulated sugar
- 1 tsp vanilla extract
- 2 tbsp milk (or non-dairy alternative)
- 1 1/4 cups (150 g) heat-treated all-purpose flour (see note)
- 1/4 tsp salt
- 1/2 cup (90 g) mini chocolate chips
For the Ice Cream Sandwich:
- 1 pint (475 ml) of your favorite ice cream (vanilla, chocolate, or cookie dough flavor works well)
Instructions:
1. Prepare the Edible Cookie Dough:
- Heat-treat the flour: Spread the flour on a baking sheet and bake at 350°F (175°C) for 5 minutes to kill bacteria. Let it cool completely before using.
- In a bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the vanilla extract and milk until smooth.
- Gradually add the heat-treated flour and salt, mixing until combined.
- Fold in the mini chocolate chips.
2. Shape the Cookie Dough Layers:
- Divide the cookie dough into two equal portions.
- Roll each portion between two sheets of parchment paper to about 1/4-inch (6 mm) thickness.
- Use a rectangular or circular cutter (or just trim the edges) to shape the dough into sandwich-sized pieces.
- Place the cookie dough pieces on a baking sheet and freeze for 30 minutes to firm up.
3. Assemble the Sandwiches:
- Let the ice cream soften slightly so it’s easy to spread.
- Take one cookie dough layer, spread a thick layer of ice cream on top, and sandwich it with another cookie dough layer.
- Press gently to secure, then smooth the edges with a spatula if needed.
- Repeat with the remaining cookie dough and ice cream.
4. Freeze and Serve:
- Place the assembled sandwiches on a baking sheet and freeze for at least 2 hours, or until firm.
- Serve straight from the freezer.
Tips:
- Flavor Variations: Add peanut butter chips, sprinkles, or chopped nuts to the cookie dough for variety.
- Storage: Wrap sandwiches individually in parchment paper or plastic wrap and store in the freezer for up to 1 week.
- No-Cutter Hack: Roll the cookie dough into a log, freeze, and slice into rounds for quicker assembly.
