I recently made Cornish Pasties, and they were a hit! These traditional British pastries are filled with a savory mix of beef, potatoes, and vegetables, all encased in a flaky, golden crust. Perfect for a hearty meal or a tasty snack. Here’s how you can make them at home:
Ingredients:
For the Pastry:
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, chilled and cubed
- 1/2 cup cold water
For the Filling:
- 1 lb (450g) beef skirt or chuck steak, finely diced
- 2 medium potatoes, peeled and finely diced
- 1 medium onion, finely chopped
- 1 small rutabaga (or swede), peeled and finely diced
- Salt and pepper, to taste
- 1-2 tablespoons butter, cut into small pieces
For the Egg Wash:
- 1 egg, beaten
Instructions:
1. Prepare the Pastry:
- In a large bowl, combine the flour and salt.
- Add the chilled, cubed butter and rub it into the flour using your fingertips until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together.
- Turn the dough out onto a floured surface and knead briefly until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
2. Prepare the Filling:
- In a large bowl, combine the diced beef, potatoes, onion, and rutabaga.
- Season with salt and pepper, and mix well.
3. Assemble the Pasties:
- Preheat your oven to 400°F (200°C).
- Divide the chilled dough into 4 equal portions.
- Roll each portion out on a floured surface into a circle about 9 inches in diameter.
- Place a generous amount of filling on one half of each dough circle, leaving a border around the edge.
- Dot the filling with small pieces of butter.
- Fold the other half of the dough over the filling to create a semicircle. Press the edges together to seal, then crimp with your fingers or a fork.
- Place the pasties on a baking sheet lined with parchment paper.
4. Apply the Egg Wash:
- Brush the beaten egg over the tops of the pasties to give them a golden color when baked.
5. Bake:
- Bake the pasties in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is cooked through.
