Ingredients:
- 4 tilapia fillets
- 1 cup crab meat (fresh or canned, drained and flaked)
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (plus extra for garnish)
- 1/2 teaspoon Old Bay seasoning (optional, for extra flavor)
- Salt and black pepper, to taste
- 2 tablespoons olive oil or melted butter
- Lemon wedges, for serving
Instructions:
- Prepare the Crab Stuffing:
- In a medium bowl, combine the crab meat, breadcrumbs, Parmesan cheese, mayonnaise, Dijon mustard, lemon juice, minced garlic, parsley, Old Bay seasoning (if using), salt, and black pepper.
- Mix until well combined. If the mixture is too dry, you can add a bit more mayonnaise or a splash of milk to reach the desired consistency.
- Prepare the Tilapia Fillets:
- Preheat your oven to 375°F (190°C).
- Pat the tilapia fillets dry with paper towels.
- If necessary, gently butterfly each fillet by slicing horizontally through the middle, but not all the way through, to create a pocket for the stuffing. Alternatively, you can leave them whole and simply place the stuffing on top.
- Stuff the Tilapia:
- Spoon the crab stuffing onto each tilapia fillet. If you butterflied the fillets, press the stuffing into the pocket.
- If you left the fillets whole, mound the stuffing on top of each fillet.
- Secure the stuffing with toothpicks if necessary.
- Bake the Tilapia:
- Lightly grease a baking dish with olive oil or melted butter.
- Place the stuffed fillets in the prepared dish and drizzle with a bit more olive oil or melted butter on top.
- Bake in the preheated oven for 20-25 minutes, or until the tilapia is cooked through and flakes easily with a fork. The stuffing should be golden brown and heated through.
- Garnish and Serve:
- Remove the toothpicks from the fillets if used.
- Garnish with additional chopped parsley and serve with lemon wedges on the side.
