Banana Bread:
- ½ cup unsalted butter, melted
- ½ cup light brown sugar
- 1 large egg
- ¼ cup sour cream
- ¼ cup white sugar
- 1 teaspoon vanilla extract
- 2 ripe bananas
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 (4 ounce) package cream cheese, softened
- 1 large egg
- ¼ cup white sugar
- 3 tablespoons all-purpose flour
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with cooking spray.
- Make the bread: In a large bowl, mix together the melted butter, brown sugar, egg, sour cream, white sugar, and vanilla until smooth. Mash the bananas with a fork and add them to the mixture. Stir in the flour, baking soda, baking powder, and salt until just combined—don’t overmix!
- Make the filling: In a separate medium bowl, whisk the cream cheese, egg, white sugar, and flour until smooth and creamy.
- Pour half of the banana bread batter into the prepared loaf pan. Spread the cream cheese filling evenly over the batter. Then, pour the remaining banana batter on top.
- Bake for about 50 minutes, or until the top is firm and springs back when gently pressed. Let the bread cool in the pan for about 5 minutes before turning it out.
