Hi there, So, here's a recipe for a cauliflower gratin that I've been making lately. It's nice and creamy and perfect for cozy evenings. Hoping you like it too

- Fresh cauliflower (though frozen works too)
- Whole milk for that creamy goodness
- A blend of shredded white cheddar, Gruyere, and Parmesan cheese
- Unsalted butter, because, well, control over salt is important
- All-purpose flour to thicken things up
- Panko breadcrumbs for that crispy topping
- A pinch of nutmeg and ground black pepper for flavor
Instructions
- Cook the cauliflower until it's tender but still has a bit of firmness. You can either microwave it or boil it in salted water.
- Now, let's make a roux. Melt the butter, add flour, and cook it for a couple of minutes.
- Slowly pour in the milk to make a nice, creamy sauce. Let it simmer until it thickens.
- Take it off the heat and season it with salt, nutmeg, and pepper. Then, add in the cheeses—Gruyere, white cheddar, and some Parmesan. Stir until it's all smooth and melty.
- Pour some of that cheesy sauce into your baking dish. Arrange the cauliflower on top, then pour the rest of the sauce over it. Make sure it's all nice and even.
- Time for the crunchy topping! Mix melted butter with Panko breadcrumbs and more Parmesan cheese.
- Sprinkle that breadcrumb mixture over the cauliflower and sauce.
- Bake it all until the top is golden brown and crispy.
