Ingredients (Serves 6):
- 2 tbsp butter or olive oil
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
- 1/4 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 1/2 cup (90 g) uncooked white or brown rice (or wild rice mix)
- 6 cups (1.5 L) chicken broth or stock
- 2 cups cooked, shredded chicken (rotisserie chicken works great!)
- 1 cup (240 ml) heavy cream or half-and-half
- 2 tbsp all-purpose flour (for thickening)
- Optional garnish: fresh parsley, grated Parmesan
Instructions:
1. Sauté the Vegetables:
- In a large pot or Dutch oven, heat the butter or olive oil over medium heat.
- Add the onion, carrots, and celery, and sauté for 5-7 minutes, or until the vegetables are softened.
- Stir in the garlic, thyme, parsley, salt, and pepper. Cook for 1 minute until fragrant.
2. Add the Broth and Rice:
- Stir in the rice and pour in the chicken broth.
- Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 15-20 minutes, or until the rice is tender (or according to the rice package instructions).
3. Add the Chicken:
- Stir in the cooked, shredded chicken and let it heat through for 5-10 minutes.
4. Make It Creamy:
- In a small bowl, whisk the heavy cream with the flour until smooth.
- Slowly pour the cream mixture into the soup, stirring constantly. Let it simmer for another 5 minutes, or until the soup thickens slightly.
5. Adjust and Serve:
- Taste the soup and adjust seasoning if needed.
- Ladle into bowls and garnish with fresh parsley or Parmesan cheese if desired.
