Have some warming soup!
Ingredients:
- 2 tablespoons cooking oil (olive oil or vegetable oil)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, peeled and diced
- 1 potato, peeled and diced
- 1 celery stalk, diced
- 1 lb boneless, skinless chicken breast or thigh, diced
- 6 cups chicken broth
- 1 cup evaporated milk
- 1 cup macaroni noodles
- Salt and pepper to taste
- Chopped scallions or parsley for garnish (optional)
Instructions:
- Sauté Aromatics:
- In a large pot, heat the cooking oil over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant and onions are translucent, about 2-3 minutes.
- Add Vegetables and Chicken:
- Add the diced carrot, potato, and celery to the pot. Stir and cook for another 2-3 minutes until slightly softened.
- Add the diced chicken to the pot. Cook, stirring occasionally, until the chicken is no longer pink on the outside.
- Add Broth and Simmer:
- Pour in the chicken broth and bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes, or until the vegetables are tender and the chicken is cooked through.
- Add Noodles:
- Stir in the macaroni noodles and continue to simmer until the noodles are cooked al dente, following the package instructions.
- Add Evaporated Milk:
- Pour in the evaporated milk, stirring continuously until well combined. Let the soup simmer for another 2-3 minutes to heat through.
- Season and Serve:
- Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
- Ladle the creamy chicken sopas into serving bowls. Garnish with chopped scallions or parsley if desired.
