Ingredients:​

  • 8 oz (225g) pasta (like fettuccine or penne)
  • 4 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes (for a bit of heat)

Instructions:​

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. Make the Garlic Cream Sauce:
    • In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Add Cream and Cheese:
    • Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, mixing until melted and smooth. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  4. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce. Season with salt, pepper, and red pepper flakes if using.
  5. Serve:
    • Serve immediately, garnished with additional Parmesan and chopped parsley.
