- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- Zest and juice of 1 lemon
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 2 tablespoons chopped fresh parsley, for garnish
- Season the chicken breasts generously with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1-2 minutes, or until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Allow the broth to simmer for 2-3 minutes to reduce slightly.
- Stir in the heavy cream, lemon zest, lemon juice, and thyme. Bring the mixture to a simmer and let it cook for 5 minutes, until the sauce thickens.
- Return the chicken breasts to the skillet, spooning the sauce over the top. Let the chicken simmer in the sauce for an additional 2-3 minutes to heat through.
- Remove from heat and garnish with chopped fresh parsley before serving.
- Serve the Creamy Lemon Garlic Chicken hot, alongside your favorite side dishes like mashed potatoes, rice, or roasted vegetables.
