Ingredients
- 2 tablespoons olive oil or butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 parsnips, peeled and diced
- 2 apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- Optional garnish: chopped fresh parsley or chives
Instructions
- Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add Parsnips and Apples: Add the diced parsnips and apples to the pot. Stir to combine and cook for about 5 minutes, allowing them to soften slightly.
- Add Broth: Pour in the vegetable or chicken broth and add the thyme. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the parsnips and apples are tender.
- Blend: Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender. Be cautious with hot liquids!
- Add Cream: Stir in the heavy cream or coconut milk, and season with salt and pepper to taste. Heat the soup gently over low heat until warmed through.
- Serve: Ladle the soup into bowls and garnish with chopped parsley or chives if desired.
