  • 4 large potatoes, thinly sliced
  • 2 cups fresh spinach, chopped
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup milk
  • 1 tsp thyme
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • 1 cup shredded Gruyère or cheddar cheese
  • Fresh parsley for garnish
Instructions:

  1. Hello, comfort food heaven! 🌟 Preheat your oven to 375°F (190°C). Grease a baking dish with a bit of butter or oil.
  2. In a skillet, sauté the sliced onion and garlic until soft and fragrant. Add the chopped spinach and cook until wilted. Smells amazing! 😋
  3. In a small saucepan, combine the heavy cream, milk, thyme, nutmeg, salt, and pepper. Heat gently, stirring until well combined. Remove from heat.
  4. Layer half of the potato slices in the prepared baking dish. Top with half of the spinach mixture and a sprinkle of cheese.
  5. Repeat with the remaining potatoes, spinach, and cheese. Pour the cream mixture evenly over the top.
  6. Cover with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.
