Creamy Potato & Spinach Gratin
Ingredients:
- 4 large potatoes, thinly sliced
- 2 cups fresh spinach, chopped
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup milk
- 1 tsp thyme
- 1/2 tsp nutmeg
- Salt and pepper to taste
- 1 cup shredded Gruyère or cheddar cheese
- Fresh parsley for garnish

Preheat your oven to 375°F (190°C). Grease a baking dish with a bit of butter or oil.
- In a skillet, sauté the sliced onion and garlic until soft and fragrant. Add the chopped spinach and cook until wilted. Smells amazing!
- In a small saucepan, combine the heavy cream, milk, thyme, nutmeg, salt, and pepper. Heat gently, stirring until well combined. Remove from heat.
- Layer half of the potato slices in the prepared baking dish. Top with half of the spinach mixture and a sprinkle of cheese.
- Repeat with the remaining potatoes, spinach, and cheese. Pour the cream mixture evenly over the top.
- Cover with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.
- Garnish with fresh parsley, and dig into this creamy, dreamy potato gratin!
