Are you looking for a pasta recipe with a twist? I just discovered a recipe, and wanna share it! Here's a detailed recipe for Creamy Roasted Red Pepper Pasta.
Ingredients:
- Roasted Red Peppers: 2 large red bell peppers (roasted and peeled)
- Pasta: 12 oz (spaghetti, fettuccine, or your favorite pasta)
- Garlic: 2 cloves, minced
- Heavy Cream: 1 cup
- Parmesan Cheese: 1/2 cup, grated
- Olive Oil: 2 tablespoons
- Salt and Pepper: to taste
- Fresh Basil: for garnish (optional)
Instructions:
- Roast the Red Peppers:
- Preheat your oven's broiler. Place the red bell peppers on a baking sheet and broil them, turning occasionally, until the skins are charred and blistered.
- Transfer the roasted peppers to a bowl, cover with plastic wrap, and let them steam for about 10 minutes.
- Peel off the charred skin, remove the seeds and stems, and roughly chop the peppers.
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.
- Prepare the Sauce:
- In a blender or food processor, combine the chopped roasted red peppers and minced garlic. Blend until smooth.
- Make the Cream Sauce:
- In a large skillet, heat the olive oil over medium heat.
- Pour in the red pepper puree and cook for 2-3 minutes.
- Stir in the heavy cream and bring the mixture to a simmer.
- Add the grated Parmesan cheese and stir until the cheese is melted and the sauce is smooth.
- Season with salt and pepper to taste.
- Combine Pasta and Sauce:
- Add the cooked pasta to the skillet with the sauce.
- Toss the pasta gently in the sauce, adding reserved pasta cooking water as needed to reach your desired consistency.
- Serve:
- Divide the creamy roasted red pepper pasta among plates or bowls.
- Garnish with fresh basil leaves and additional Parmesan cheese if desired.
Tips:
- Roasting Red Peppers: If you prefer, you can use store-bought roasted red peppers to save time.
- Creamy Texture: For an even creamier sauce, you can blend in a tablespoon of cream cheese or mascarpone cheese.
- Spice it Up: Add a pinch of red pepper flakes or a dash of cayenne pepper for a spicy kick.
