Here's a recipe for Crispy Bangus Belly:

Ingredients:

  • 2 pieces bangus (milkfish) belly, cleaned and sliced
  • 1 tablespoon calamansi juice or lemon juice
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • Cooking oil for frying
Instructions:

  1. Pat dry the bangus belly slices with paper towels to remove excess moisture.
  2. Drizzle calamansi juice or lemon juice over the bangus belly slices and season with salt and pepper. Let them marinate for about 10-15 minutes.
  3. Heat cooking oil in a frying pan over medium heat.
  4. Dredge each bangus belly slice in all-purpose flour, shaking off any excess flour.
  5. Carefully place the dredged bangus belly slices in the hot oil, skin side down.
  6. Fry the bangus belly slices until the skin is golden and crispy, about 4-5 minutes per side.
  7. Once the bangus belly slices are crispy and cooked through, remove them from the pan and drain excess oil on paper towels.
  8. Serve hot with steamed rice and your choice of dipping sauce, such as vinegar with garlic and chili or soy sauce with calamansi.
